7-Spice Sriracha Pho

Ingredients

1 litre beef stock
1/2 onion, sliced
3 cloves garlic, minced
1 chunk ginger, grated
1 tablespoon fish sauce
2 tablespoons Hoisin sauce
1 package (400g) rice noodles
Water for boiling
1 tablespoon olive oil
350 grams boneless beef chuck, sliced thin
1/4 cup fresh lime juice
1 tablespoon brown sugar
2 tablespoons Hot Toddy 7-spice Sriracha sauce
1/2 cup fresh cilantro leaves
1/2 cup fresh mint leaves
1/2 cup fresh basil leaves
1 jalapeño, thinly sliced
1 lime, cut into wedges

Instructions

  1. In a large pot, simmer beef stock. Add sliced onion, minced garlic, and grated ginger.
  2. Simmer for 20-30 minutes until the broth is fragrant and flavorful.
  3. Stir in fish sauce, Hoisin sauce, and Hot Toddy sriracha sauce. Keep the broth warm over low heat.
  4. In a separate pot of boiling water, cook rice noodles according to package instructions. Drain and set aside.
  5. In a skillet, heat vegetable oil over medium-high heat. Sear the beef slices for 2-3 minutes on each side until browned and cooked through.
  6. In a small bowl, mix together fresh lime juice, brown sugar, and 1 tablespoon of Hot Toddy sriracha sauce.
  7. To assemble the pho, divide the cooked noodles among four serving bowls. Top with slices of cooked beef and ladle the hot broth over the top. Garnish each bowl with fresh cilantro, mint, basil, sliced jalapeño, and a lime wedge.
  8. Drizzle the lime and Hot Toddy sriracha sauce mixture over the top.
  9. Serve immediately and enjoy the spicy and flavorful Hot Toddy sriracha pho!
