Ingredients

3 ripe avocados, peeled and pitted
1 small red onion, finely chopped
2 ripe tomatoes, diced
1/4 cup fresh coriander, chopped
2 cloves garlic, minced
Juice of 1 lime
Salt and pepper, to taste
1 jalapeño, seeded and finely chopped (optional for extra heat)
Nachos, for serving

Instructions

  1. Mash the Avocados: In a medium bowl, use a fork or potato masher to mash the avocados to your desired consistency—chunky or smooth, your call.
  2. Mix the Ingredients: Add the chopped red onion, tomatoes, coriander, and minced garlic to the mashed avocados. If you're a fan of heat, throw in the jalapeño. Stir everything together until well combined.
  3. Add Lime and Season: Squeeze in the lime juice and sprinkle with salt and pepper. Mix again. The lime adds zing and helps keep the guacamole bright and green.
  4. Chill: Cover the bowl with plastic wrap, pressing it directly onto the surface of the guacamole to prevent oxidation. Chill in the refrigerator for at least 30 minutes before serving. This helps the flavours meld beautifully.
  5. Serve with Nachos: Lay out your nachos on a platter—spoon generous dollops of guacamole over the nachos.
